One of the best traditional dish in Lijiang, Yunnan province, China, is the “pork rib fondue”: 老東巴 麗江腊排骨火鍋 (lao Dongba Lijiang lapaigu huoguo). The pork ribs are dried in the open air in the restaurants themselves, or on the street.
